Coming up with quick, delicious, and fresh weeknight meals for my family can be a difficult task. It’s why I usually tend to stick to the same few dinner ideas. I still feel like I spend way too much time in the kitchen, however. If only I could take a staple that my entire family loves, like pizza, put our own spin on it and turn the leftover toppings into a weeknight dinner in itself. Maybe I can!

My kids love making their own pizzas, because they love being able to control their own toppings. Before we get to that, however, we need a base for our pizzas. I prefer to use Bertolli® Tomato & Basil Sauce for our dishes. Also available at Walmart, I can get multiple uses out of one jar, especially when I store what’s left over in our Rubbermaid® Brilliance™ containers, and you get a premium Tuscan taste without having to take a trip to Italy. Not that I wouldn’t mind a trip to Italy. I also grabbed a jar of Bertolli® Creamy Basil Alfredo for a later dish.

To continue on with our Biscuit Dough Pizzas, you need a tube of large biscuits, shredded pizza cheese, and any toppings you can think of. We went with hamburger and sausage, pepperoni, onions, peppers, and mushrooms.
Stretch the biscuit dough out as much as you can without forming holes. Place each on a large sheet pan. We were able to fit 6 pizzas on one pan. Spread about 2 spoonfuls of Bertolli® Tomato & Basil Sauce on each round of dough before adding shredded cheese.
Then, let the kids have fun building their own pizzas with easily accessible toppings.
Of course, my kids chose to make theirs without vegetables. That’s OK, though. I browned plenty of hamburger and sausage for not only this reason, but because I planned on making Leftover Pizza Chili for the night after!
After the pizzas are constructed, pop the pan in a 350 degree preheated oven for about 15 minutes or until the biscuit dough is lightly browned and all cheese is melted. Yum!
Once everyone has had their share of pizzas, store the leftover toppings until tomorrow when it’s time for Leftover Pizza Chili! Brown the leftover onion in a large pan. Next, throw in around a pound of the leftover hamburger and another pound of leftover sausage, but really it’s whatever you have left. Add 2 cans of diced tomatoes and a can of red kidney beans, then finish off with the leftover Bertolli® Tomato & Basil Sauce. You could even add the leftover peppers and mushrooms if desired.
When a bowl of Leftover Pizza Chili is ready, be sure to top with leftover pizza cheese! It’s a simple weeknight chili that’s not only mighty delicious, but also cleans out the fridge in a matter of minutes!
- 1 tbsp olive oil
- 1 cup onion, chopped
- 1 lb ground hamburger, browned
- 1 lb ground Italian sausage, browned
- 2 cans diced tomatoes
- 1 can red kidney beans, drained and rinsed
- 1½ cups Bertolli® Tomato & Basil Sauce
- 1 cup water
- 2 tbsp chili powder
- ½ tbsp ground cumin
- shredded cheese & sour cream for topping
- In a large pot over medium-high heat, add 1 tbsp olive oil. Add chopped onion and stir until brown and translucent.
- Add hamburger and sausage.
- Stir in diced tomatoes, beans, and Bertolli® Tomato & Basil Sauce. Add 1 cup of water, as well as chili powder and ground cumin.
- Bring to a slow boil, then turn down to a low simmer.
- Can be eaten in a half an hour or let cook and simmer over low heat. Can also transfer to a crock pot over low if desired.
